As computer-aided design (CAD) became more accessible with the rise of inexpensive software and hardware, a major shift took place in the construction industry in the late 1990s. I’m just starting to learn Algebra, and I’m struggling to understand the difference between vector spaces and vector spaces over a field. Why is the concept of vector space over a field so special?
For example, in my textbook, the vector space of all polynomials of degree at most 2 with real coefficients is given by the set of all functions

but the set of all polynomials of degree at most 2 with complex coefficients is given by the set of all functions
$$f: \mathbb{C} \to \mathbb{C}.$$
I can understand that vector spaces are defined in terms of addition and scalar multiplication, but it seems that this definition is dependent on the field that we’re working over. Is this true? I’ve heard that when we consider $\mathbb{R}$ as a vector space over $\mathbb{Q}$, the scalar multiplication function is defined by the restriction of the function $x\mapsto x^2$, so I don’t understand why there’s an inconsistency in the way vector spaces are defined over $\mathbb{R}$ and $\mathbb{C}$.
